this fruit is excellent

Papaya is my new favorite fruit. This morning, I'm having a mono-meal breakfast of half a papaya. I'll save the other half for dessert later. Go get you some - its delicious!



Papaya has tremendous health benefits, too. I love it because it supports the cardiovascular system and it encourages the renewal of muscle tissue while alleviating inflammation. Papaya is great as a post-workout recovery meal. It also boosts the immune system and helps support the digestive system by breaking down proteins and producing enzymes. It is very high in Vitamin A, which can help lower the risk of emphysema. This fruit is excellent.

more mango, please

mmmmmango! I came across this mango dressing a few months ago and it has now become a staple in my recipe book. Sometimes I'll even eat it as a soup or smoothie. I've been buying a case of mangoes a week with no trouble eating them all. Mangoes are more calorie-dense than most fruits, so they keep you satisfied longer and help me get my proper daily caloric intake.




my favorite salad:

1-2 heads of romaine, spinach, or spring mix
1/2 red bell pepper, chopped
1/2 cucumber, chopped
1/2 avocado, chopped
1/4 cup chopped red onion
1/2 cup chopped celery
handful of cherry tomatoes

mango dressing:
1-2 mangoes, depending on their size
handful of cilantro OR basil OR scallions
1 tbsp. tahini (optional)
blend well in a Vitamix

This salad is so easy & it is BENNY APPROVED!

st. patty's day

I made a green lunch for St. Patty's day!


Today's lunch is:
spiralized zuchinni noodles coated with avocado and nama shoyu (raw soy sauce)
broccoli lightly sauteed in coconut oil

pizza

Pizza is the best. I've had an amazing raw pizza, but I didn't have the time to dehydrate anything today. I decided to go with gluten free pizza crust and dairy free cheese. It was hot and delicious... even BENNY APPROVED! And if I hadn't have known any different, I would have thought it was just a regular pizza.

The sauce was made from scratch from tomatoes we canned last year, tomato paste, garlic, and herbs from the garden.

blackberry morning

Good morning! I made a "fruit cereal" for breakfast this morning, and I think it might be my new favorite breakfast.


blackberry "cereal":
1 cup blackberries
1 golden delicious apple, chopped
1 tbsp. cinnamon
2 tbsp. hemp seeds
1/2 cup almond milk
drizzle with local honey

road trip

My best friend is getting married in Dallas, so it's road trip time for me and Benny! It is an eleven hour drive from Nashville, so we're splitting it up and staying with friends along the way. I'm excited to see Katherine in Memphis, Lily & Will in Dallas, and Treva & Josh in Little Rock. Here we go!

To save some moo-lah (and to avoid eating fast food on the road), we're packing lots of snacks for the car. The most important thing I've learned with this diet is always be prepared. Inevitably, I'll be getting hungry every few hours. If I don't have something with me, chances are I'll be incredibly tempted to eat something awful. If you're trying to follow a healthy diet, you'll quickly realize that the American food industry does not make this easy. Take a little extra effort and prepare meals, think ahead of time, and pack snacks. You'll be much happier for it. Remember, this isn't about deprivation or starvation. It is about the happiness you feel when you're healthy and happy.

So, we loaded up the car with a bunch of bananas, several apples, a box of grapes, some gluten-free crackers, carrot sticks & hummus, oatmeal, green smoothies, and several containers of salad. We prepared the salads ahead of time and packed the dressing on the side. This way, while one person drove, the other could eat. We had this system down! Our food lasted through the weekend - we were satisfied, happy, and healthy!

lil sweet thang

I have a major sweet tooth, so I doubt I'll ever stop eating dessert.

Here's a lil sweet thang that is simple, nutritious, and delicious.

chocolate blackberry cobbler:
1 cup blackberries
1 sliced banana
1/4 cup shredded coconut
1/4 cup cacao nibs
drizzle with honey

blue breakfast

Who says raw food has to be difficult? My breakfast is either sliced fruit or a green smoothie. Today, I had 2 sliced bananas and 2 cups of blueberries. Yum.


This lake is about 5 minutes from my office. I love coming here for some fresh air during the middle of the day.
