I've been struggling to warm up and stay warm! So, I've been craving hot food. While smoothies, fresh fruit, and tasty salads will keep you energized and healthy this winter, sometimes you may just want some hot food.</span><br />

When cooked, the squash strings out like spaghetti noodles. It tastes great and is an excellent alternative to processed noodles. With only 40 calories per cup, this veggie is very low in fat but high in vitamins and minerals. Try it - I think you'll love it, too.</span><br />

Cut the spaghetti squash in half and place it face down on a sheet in your oven. I use a Silpat (stick-free), but if you're just using a cookie sheet you may want to add a little coconut oil so the squash doesn't get stuck. Cook for about 30 minutes. You'll know it is ready when the edges touching the sheet begin to brown.</span><br />

<span style="font-family: Georgia,"Times New Roman",serif;">When the squash has about ten minutes left of cooking time, begin to sautee the rest of the vegetables. On the stove, melt the coconut oil and add the garlic on medium heat. Once the garlic begins to brown, add the kale. Stir it around to evenly cook. Add the tomatoes and mushrooms and let it sautee for about 2 minutes on medium heat. Squeeze the orange and lemon juice on top and continue to sautee. </span><br />
<span style="font-family: Georgia,"Times New Roman",serif;">Take the squash out of the oven. Holding it in one hand (with an oven mit) begin to scrape out the "spaghetti" using a fork until only the hard shell is left. Top your "spaghetti" with the sauteed veggies from the stove. Sprinkle a bit of pepper and sea salt on top. </span><br />

I was in Singapore and Malaysia in November and I have just been on chili-garlic-curry overload ever since. YUM.<br />

I've been making it on my own lately and it is so simple and tasty. I'll start by slicing a bunch of vegetables (long, rectangular shapes are the best) and add it to the curry sauce. Experiment with the spice level and let me know what you think. Good luck!<br />

Mix the coconut milk, paste, cayenne, and ginger in a large pot on medium heat. Just before it begins boiling, add all the veggies you want. Let it simmer on medium heat for a few minutes, stirring occasionally. Pour into your bowl and top with fresh basil leaves. <span style="font-family: Georgia, Times New Roman, serif;">This year I wanted to share my tips for preparing a beautiful holiday meal and staying healthy through the holidays.</span><br />

<span style="font-family: Georgia, Times New Roman, serif;"><b>1. Hydrate!</b></span><br />
<span style="font-family: Georgia, 'Times New Roman', serif;">Start every morning with a cup of hot water and fresh lemon. The lemon helps detox and cleanse your system while preparing you for the day. Also, drink 3/4 your body weight in ounces of water. (So if you weigh 150 lbs, try to drink 100 oz of water during the day.) Sometimes hunger is really just a sign of dehydration. If you find yourself munching on cookies or quiches all day, try slowing down and drinking some water instead. If you are properly hydrated you may be less inclined to sit at the snack bar all afternoon. End your day the same way you started - with hot water and lemon.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><i><br /></i></span>
<span style="font-family: Georgia, Times New Roman, serif;"><i>Bonus tip:</i> If you're fighting a cold, add fresh ginger, a pinch of cayenne, and a teaspoon of local honey to your hot lemon water. It will knock the cold out so quickly!</span><br />

<span style="font-family: Georgia, Times New Roman, serif;"><b>2. Eat fresh!</b></span><br />
<span style="font-family: Georgia, Times New Roman, serif;">Sure, our holiday meals can be full of vegetables. But we typically mess it up by adding so much salt and butter. While snacking, stick to the fresh fruit and veggies tray (and skip the sauces). Load up on apple slices, carrots, cucumber, broccoli, etc. By eating the healthy foods first, you'll be less inclined to chow down on all the other "treats". You'd be surprised how many hidden calories are in all those cheese cubes and bite size snacks. Don't start your day weighed down by these foods, but only munch on the food that will leave you feeling energized and ready for the real meal.</span><br />
<span style="font-family: Georgia, Times New Roman, serif;"><br /></span>
<span style="font-family: Georgia, Times New Roman, serif;">When it comes to the actual Thanksgiving meal, try steaming your veggies like broccoli, green beans, carrots, and cauliflower. Opt for fresh lemon juice and garlic instead of butter. If you must, try some coconut oil and sea salt.</span><br />

turkeys is one of the most disgusting farming that happens in America. They
live for months in crammed sheds filled with ammonia, with their beaks and toes
cut off, until they die a bloody and painful death. Yuck. They are filled with
antibiotics to kill germs and stimulate their growth, but this affects the meat
that you eat. <span style="background-color: white; background-position: initial initial; background-repeat: initial initial;">Leading health organizations—including the World Health
Organization, the American Medical Association, and the American Public Health
Association—have warned that the farmed-animal industry is creating possible
long-term risks to human health and will spread antibiotic-resistant

I've been a runner for years - running cross country in middle school and high school - but running a full marathon was a whole different challenge. Marathon training can take over your life but it is so incredibly rewarding when you cross that finish line.<br />

My first marathon was Indianapolis in 2009 and I ran with the St. Judes team. Raising money allowed me to share what I was doing with friends and family, gain encouragement through my daily training, and gave us all a reminder of what life is all about.<br />

Since that race, I've run several other full and half marathons - I think I got the bug! Eating a gluten free & vegan diet has tremendously helped my running, too. I have more energy to train harder, my recovery times are shorter, and my race times are much faster. (My PR was last fall running the Ragnar Relay - even faster than I was in high school!)<br />

Happy Friday! I woke up this morning and practiced the 5 Tibetan Rites. What a way to wake up!! Paul Risse demonstrates these at about 2 minutes into this video. For detailed information about these rites, click <a href="http://www.mkprojects.com/pf_TibetanRites.htm" target="_blank">here</a>. Basically, they are a series of 5 quick exercises that get your body moving and your blood flowing. Don't forget to exercise daily! It seems like everyone is past the detox symptoms, starting to get used to raw food, and feeling great. I've definitely noticed that I have a much better focus and I have consistent energy throughout the day. I've really missed coffee because I just like the taste of it, but I don't like the way it makes me feel at all. The highs and lows - energy spurts then crashes - are not good. I think I'm gonna have to just kick it and never go back to it. There really is something special about eating a clean diet. I feel like my whole body is just working so much better. I have been sleeping really well at night, focusing better at work, and finding more energy to get up and move. As you know, I try to eat a completely raw vegan diet already, but I have been very lax about that lately and have been eating some non-raw meals and lots of vegan desserts (which are high fat). I've also been drinking coffee daily and really needed to get off of that. This cleanse has helped me kick-start my health and food habits as we head into the fall season. It has also helped me stop emotionally eating and overeating desserts. Like I said before, eating for your health, not your comfort, is what will really satisfy you.</span><br />

<span style="font-family: Georgia, Times New Roman, serif;">Coat a pan with the coconut oil and slice each tomato into 6 wedges. Spread the wedges and onion slices over the pan and broil for about 7 minutes - until the tomatoes look dry on the top and the onion begins to brown. If you have garlic cloves, add these to the pan to broil, too. While that is cooking, spiralize 1 large (or 2 small zucchini) and place on your plate. Place the cooked tomatoes and onion (and 1 garlic clove) into the blender and add the cayenne, pepper, and sun-dried tomatoes. If you did not have garlic cloves, add the garlic powder into the blender. Blend until chunky. Pour warm sauce over your zucchini noodles and top with the fresh basil. </span><br />

Melt the coconut oil and add to the mixture along with the applesauce and vanilla. Cover the bowl and let it sit in the freezer for half an hour. In a smaller bowl, stir the remaining 1/4 cup sugar and 2 tbsp. cinnamon while the oven preheats to 325F. </span></div>

<span style="font-family: Georgia,'Times New Roman',serif;">Roll together teaspoon sized balls and cover with the cinnamon sugar. Place on a cooking sheet (covered with parchment paper) about an inch apart. Lightly press a fork over each ball to help them spread. Bake for 7 minutes, rotate the cookie sheet, and bake for another 7 minutes. Once the cookies are brown and crispy, remove from the oven and let sit for 15 minutes before removing from the cookie sheet. </span><br />

It seems like we're all fighting to stay cool in this summer heat! With temperatures over 100 degrees, we are getting quite the summer. So, gazpacho for dinner it is! Gazpacho is a chilled, tomato based, chunky soup that you typically find in Spain. It is filling and refreshing at the same time. I used a couple of mangoes in mine to add some sweetness and brighten up the soup. I also had a huge heirloom tomato from the garden that I was excited to eat. This recipe was incredibly easy to create, but had some really great flavors. I'm excited to share it!</div>

A little hot sauce would be nice, too. I used spring mix today, but spinach would also work.</span><br />

I cannot get enough of them this summer. If you cannot get to a farmer's market, be sure to buy organic when buying foods like greens, herbs, and fruits that you eat the skin. </span><br />

<span style="font-family: Georgia, 'Times New Roman', serif;">The quinoa is optional for this recipe. It definitely makes it heartier and can add a little more depth to the meal, but if you're eating completely raw leave it out. Quinoa is a great substitution for a rice or grain because it is gluten free, full of phytonutrients and antioxidants, and it is a superfood! It is a complete protein, containing all 9 essential amino acids. It is full of fiber and has been proven to help prevent and treat breast cancer and diabetes. So, if you're craving bread or rice... skip it and go for the quinoa instead.</span><br />

You'll want about 3/4 cup of cooked quinoa for this recipe, so follow the instructions on the back of your package for cooking information. I buy the Whole Foods brand and it takes about 15 minutes to cook. If you cook a larger portion, just store the leftovers for tomorrow.</span></span><span style="background-color: white; font-family: Georgia, 'Times New Roman', serif;"><b style="background-color: white; font-family: Georgia, 'Times New Roman', serif;"><span style="font-size: large;"><br /></span></b></span><br />

For dessert, we split a gf vegan apple tart. The restaurant has a whole list of gf pasta dishes in addition to the pizza, and they use Daiya cheese which is soy free. I will definitely be going back whenever I'm in the city. </span><br />

They are open 24 hours and their menu features several great salads and vegetarian options. Located in the lower East Side, it was within walking distance to the apartment we were staying in. The service was great, the food was even better, and we loved it. </span><br />

Their take-away menu makes it easy to get raw food on the go. I got the falafel with tabouleh and tahini/spicy dipping sauce, walked a block to Union Square Park, and had a nice picnic. </span><br />

In the food processor, blend the almonds and dates until finely ground. Using your hands, mold into pie shape. Using the food processor again, blend the strawberries and figs until smooth. Pour the fruit mixture into your pie crust, drizzle with local honey, and enjoy! </span><br />
