ginger citrus pad thai

Fresh, raw, nutritious pad thai courtesy of Megan Elizabeth.
This dish will definitely satisfy your cravings.

citrus ginger dressing:
1/2 cup fresh orange juice
1/3 cup fresh coconut meat
1/2 cup cilantro
1/3 cup chopped scallions
2 tbsp. fresh lemon juice
1.5 tbsp. raw tahini
2 sage leaves
1 quarter sized slice of ginger
blend all ingredients well in your Vitamix.

pad thai:
4 cups spiralized zuchinni
1/2 cup shredded carrot
1/3 red bell pepper sliced thinly
mix the dressing in with the noodles
serve over fresh spinach and garnish with sprouts
