roasted asparagus

I've been branching out with my veggies lately and eating more asparagus. You can slice asparagus in half and eat it raw in salads or sushi. Friday night, I decided to roast it and eat as a side dish with my dinner. Guess what... its BENNY APPROVED... I've now made it for him 3 nights in a row!

simple balsamic roasted asparagus:
coat bottom of the pan with coconut oil
lay asparagus flat across the bottom (about 20 pieces, depending on the size of the pan)
slice 3-4 cloves of garlic in half and spread the pieces around the asparagus
bake at 375 for about 20 minutes
remove from the over and top with about 1.5 tbsp. balsamic vinegar
sprinkle with sea salt
